Have you ever tasted the spice powders in your kitchen pantry? Do you know the reasons why the recipes we make sometimes, or most of the time, turn out to be horrible? 

After searching for half a day, you would finally have found a recipe that you want to make, but the end result of the recipe will be a disaster. Do you know why? It's because one of the main reasons is the ingredients that the recipe author used in it and the ingredients in your pantry do not have the same taste. Really? Yes! Most of the time. You are not alone. It took me many years to understand this secret and to become a better cook and lovable foodie.

Here are the secrets that I follow when making any recipes.

  • First, read the full recipes thoroughly.

  • Give a quick taste check of the spice powders in your pantry that are mentioned in the recipe.

  • Coriander powder, cumin powder, fennel seed powder, garam masala powder. These are some of the ingredients that will overpower the taste of the recipes. Too much chili powder will make the recipe spicy; too much salt will make it salty. Too much lemon or tamarind will make the recipe tangy.

  • Now come the onions and tomatoes. Do you know what happens if you add too much onion and tomatoes? Yes, the gravy will have more onion and tomato flavor and residue (onion and tomato chunks).

  • Do not follow the exact ingredients mentioned. Always add it according to your taste, which means reducing the quantity of the spice powder, like the recipe may say 1 tbsp, but you can reduce it to ½ tbsp.Taste the gravy; If needed more, you can add it again. But if it is too much, you cannot take it out once added.

  • While cooking, always be mindful.
