Have you tried Tempura? It's a Japanese cuisine made with seafood and vegetables. It is made with thin batter and deep fried in vegetable oil or canola oil or light olive oil.

Do not over beat the batter. It is ok if there is few lumps in the batter
The batter has to be in a runny consistency not thick not watery

Ingredients
All purpose flour - 1 cup
Egg - 1
Ice cold water - 250 ml or 1 cup and 2 tbsp
Oil to fry
Preparation
Clean the shrimp. Make one or two slits on the sides to make the shrimp hang straighter
Cut some veggies like carrots, cauliflower, kales, broccoli
Add all the ingredients except oil. Gently mix. Do not over mix
Add extra spoon full of water if needed to bring the batter to the right consistency
Heat the oil. The oil temperature should be medium high. For the batter to cook immediately without drinking oil.
Dip the shrimp and immediately add it into the oil
Do not flip or touch the cooking shrimp in the oil for 1 or 2 minutes then flip them
Remove from oil when it turns light brown color.
